Instant Homemade Freezer Meal: Cheesburger Mini Meatloaves

In my last hurrah of errands and cooking before going back to work, I decided to make something different for dinner. Then it hit me. This is a great working mama meal!

If you’ve followed me at all, you know about my mama guilt of not engaging Ava enough. Well this meal allows us to work together on the weekend, and you end up with great food during the week!

She had a good time helping me cook. I really want her to learn to cook, so the more I can involve her the better.

Jess’s Cheeseburger Mini Meatloaves

1.5-2 lbs of lean hamburger meat
A few strips of bacon
About 8-10 Ritz crackers, crushed
2 beaten eggs
1/2 cup ketchup
1/4 to 1/2 cup shredded cheddar cheese
Couple shots of Worcestershire sauce
Couple shots of Italian dressing
1/4 cup diced onion
1/2 cup Parmesan cheese
Shot of garlic salt
Pepper

Mix all ingredients in a large bowl. I “diced” the bacon by cutting it into small pieces with kitchen shears. All measurements are rough. Add more or less as you like. This would probably work with BBQ sauce or green chiles. Make it your own.

Spray a cupcake pan with non-stick spray. Add rounded mounds of meat into the tray (you decide what size works for you). Done! If you’re feeling fancy, you can decorate them with a sliver of green pepper, a jalapeño slice or even a coating of BBQ sauce.

Bake for about 25 minutes at 350.

You can easily follow the directions and freeze these. Instead of baking, pop them in the freezer till solid then place them in a freezer bag. Instant homemade frozen dinners. Add some frozen veggies and BOOM. Done.
